This is another delicious and easy recipe that will make you very popular among your friends. What you need is:
- 2 eggplants
- 2 eggs
- ~100g breadcrumbs
- garlic (up to you)
- parsley and/or mint
- salt, pepper, and a bit of spicy paprika, if you like spicy food
- frying oil
After you washed the eggplants cut them a half and bake them in the oven for ~30 min (depending on how strong is your oven - ideally, you want to make the pulp soft).
Meanwhile, chop the garlic and the herbs, and place them in a large bowl where you will later add all the other ingredients. When the eggplants are ready to be skinned, take out the pulp, and chop it finely. Then add it into the large bowl where you have already put the chopped garlic and the herbs. Season it.
Beat the eggs and then add them to the large bowl.
Add the breadcrumbs. Keep some to be spread on a large plate where you will make your balls. Start to mix the whole with your hands and shape small balls. Then put those into the plate with more breadcrumbs to make their external crust. When all are done you are ready to fry!
You can serve them with a sauce (tomato sauce, pepper, sauce, yogurt, and carrot…or just eat them as they are).
