Climate change: Paprika lentil soup



It's time for another easy and delicious vegetarian recipe to contrast climate change. For this you need (4 portions):

- 250 gr dry lentils (pick your favourite ones)

- 3 potatoes

- 2 carrots

- 1/2 zucchini

- 1/3 leek

- 1 onion

- garlic (as much as you please)

- salt, black pepper

- Hungarian paprika (spicy or sweet, up to you), best from Békéscsaba

- olive oil



Start by washing the lentils in a colander and then chop all vegetables.





Add everything into a pot (medium fire) with a generous amount of olive oil. Stir it regularly for about 10 minutes. Meanwhile, warm some water in a water boiling machine.

Then add the washed lentils and the paprika. Mix it well and cook for another 5 minutes.



After 5 minutes, add warm water into the pot (always medium fire), and cook for at least 45 minutes. You may have to add water if you see it is drying too much, and you have to stir it regularly. Before serving, adjust for salt if needed.



Slice some bread and voilà!
